My friends say that I am a good chef, but I cannot bake to save my life.  So lately I am trying to make all sorts of cookies and deserts in order to practice. After all practice makes perfect (unfortunately not in my case!).

When I came across this recipe I thought to give it a go.  It seemed quite easy and after a couple of tries I managed to make the softest and fungiest(is that even a word!?) cookies ever.  Give it a go and let me know what you think.

  • 3/4 cup  unsalted butter
  • 1 1/2 cup  granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups  all-purpose flour
  • 2/3 cup  cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips (optional)
Preheat the oven to 180 oC and line a pan with parchment paper.
In a bowl mix the butter and sugar until you get a creamy mixture. Add the eggs and vanilla extract.  In another bowl combine the flour, cocoa powder, soda and salt and then slowly add them to the butter.sugar mixture.  At the very end add the chocolate chips. Bake for 10-12 minutes and enjoy.
